In today's minefield ridden food arena, the only way to source an ingredient correctly is to literally go to the source. And thats exactly what Caro and I did for the delicious Sea Bass we will be serving you.
Last summer, we took a trip down to an amazing fishery in Southern Spain to visit Miguel and Eduardo at Veta la Palma. The fishery is one of a kind and is not only sustainable but 'net-positive' meaning that its fishing activities are improving the direct and surrounding environment in which it operates. Proof of this is the fact that it lies in the middle of a natural reserve and is home to over 600,000 birds and one of Europe's largest flamingo populations. The Sea Bass is delicious, and according the New York based Blue Hill Farm chef Dan Barber (check out our previous post on his TED talk) and Caro and I one of the best in Europe and the world.
