SPECIAL RICE
Being temaki specialists means we’re not just obsessed about fish, but rice too. We source ours from a family owned farm in the Italian Po Valley, using a mix of two strains of Japanese rice – koshi-hikari and sasa-nishiki. When mixed with our bespoke rice vinegar it becomes a delicious, melt-in-your mouth experience with a special texture and consistency.

Our Atlantic salmon is sourced and delivered direct from sustainable farms in North West Scotland. They’re fished in low density nets placed far from the coastal shore; here the tidal currents and waves are strong and the salmon get a proper workout, meaning they are lean and tasty.
